Baked Haddock

Jared and I decided to add another fish dish to our menu this week. However, when we went shopping last Sunday, the grocery store did not have Haddock, so we substituted the Haddock with Flounder. The recipe calls for a white fish, so we were set. Unfortunately, this dish did not turn out as planned.

Ingredients:
3/4 cup milk
2 teaspoons salt
3/4 cup bread crumbs
1/4 cup grated Parmesan cheese
1/4 teaspoon ground dried thyme
4 haddock fillets (we used flounder)
1/4 cup butter, melted

Directions:
1) Preheat oven to 500 degrees.

2) In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the haddock fillets in the milk, then press into the crumb mixture to coat. Place haddock fillets in a glass baking dish, and drizzle with melted butter.

3) Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

Husband & Wife Rating: C
The fish turned out too salty, so we did not eat more than 2 bites.

Suggestions for a future attempt:
* Use panko bread crumbs instead of regular or flavored bread crumbs
* Use less salt than the recipe states.

As a result of the wasted lunch, our meal replacement was last night's leftovers from Sukhothai Restaurant in Albany (Cashew Nut with Chicken)

Baja Fish Tacos & Yellow Rice


After coming back from our honeymoon in Hawaii, Jared and I decided that we would try to incorporate more fish into our diet. I am not a big fan of fish, but since it is a very healthy meal option; I am trying to eat more, and make fish dinners that I enjoy. The following recipe was great because there was a ton of flavor including that of the fish.

Ingredients:
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup chopped fresh cilantro
1 (1.25 ounce) package ORTEGA® Taco Seasoning Mix, divided
1 pound cod or other white fish fillets, cut into 1-inch pieces
2 tablespoons vegetable oil
2 tablespoons lemon juice
1 package (12) ORTEGA® Taco Shells, warmed (I used wheat tortilla wraps)

Toppings:
Lettuce, tomato, salsa

Directions:


1) Combine sour cream, mayonnaise, cilantro and 2 tablespoons seasoning mix in small bowl.

2)
Combine fish, vegetable oil, lemon juice and remaining seasoning mix in medium bowl; pour into large skillet. Cook, stirring constantly, over medium-high heat for 4 to 5 minutes or until fish flakes easily when tested with fork.

3)
Fill taco shells with fish mixture. Top with tomato and sour cream mixture, lime juice and taco sauce. Add toppings.

Husband Rating: A
Jared enjoyed the fish tacos, especially because it was a new dish for us. It was a great alternative to beef and chicken tacos. The yellow rice was a nice side dish as well.

Wife Rating: A
Considering I am that big into fish, I enjoyed the tacos. I thought all of the toppings and sour cream mixture created a nice flavor, plus the taco seasoning was a perfect "marinade" for the fish.

We will definitely make this dish again!
